1 ripe plantain, peeled and sliced into rounds
2 tablespoons olive oil
Salt and pepper, to taste
4 Boca Chickon patties
4 slices of bread (use gluten-free bread if desired)
1 avocado, sliced
1 tomato, sliced
4-5 lettuce leaves
Preheat your oven to 375°F (190°C).
Arrange the plantain slices on a baking sheet, drizzle with olive oil and season with salt and pepper. Bake for 10-15 minutes, or until golden brown.
While the plantains are baking, heat up the Boca Chickon patties according to package instructions.
Toast the bread slices.
Spread vegan mayo on one side of each slice of bread.
Assemble the sandwich: place lettuce leaves on one slice of bread, followed by Boca Chickon patties, avocado slices, tomato slices, and roasted plantains. Top with the other slice of bread.
