Vegan Burrito

Ingredients:
For the burrito bowl:
1 cup cooked brown rice
1 cup black beans, cooked or canned (drained and rinsed)
1 cup corn kernels, cooked or canned (drained)
1 cup diced tomatoes
1/2 cup diced red onion
1/2 cup diced bell peppers (any color)
1/4 cup chopped fresh cilantro
Juice of 1 lime
Salt and pepper to taste
For the cilantro lime crema:
1/2 cup raw cashews, soaked in water for at least 2 hours
1/4 cup water
1/4 cup fresh cilantro leaves
Juice of 1 lime
1 clove garlic
Salt to taste
Instructions:
In a bowl, combine the cooked brown rice, black beans, corn kernels, diced tomatoes, red onion, bell peppers, chopped cilantro, lime juice, salt, and pepper. Mix well to combine.
To make the cilantro lime crema, drain and rinse the soaked cashews. In a blender or food processor, combine the cashews, water, cilantro leaves, lime juice, garlic, and salt. Blend until smooth and creamy. If needed, add more water to achieve the desired consistency.
Heat the burrito bowl mixture in a microwave or on the stovetop until warm.
Serve the burrito bowl with a drizzle of the cilantro lime crema on top.
You can also garnish the bowl with additional chopped cilantro, lime wedges, and sliced avocado
