VEGAN BUTTERFINGER CUPS

INGREDIENTS:
1 cup vegan chocolate chips
1/2 cup creamy peanut butter
1/2 cup vegan powdered sugar
1/2 cup crushed cornflakes or crispy rice cereal
1 teaspoon vanilla extract
Pinch of salt
INSTRUCTIONS:
Line a mini muffin tin with paper liners or use a silicone mini muffin mold.
Melt the vegan chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until fully melted. Alternatively, you can melt them using a double boiler on the stovetop.
Spoon a small amount of melted chocolate into each muffin cup, just enough to cover the bottom.
In another bowl, mix together the creamy peanut butter, vegan powdered sugar, crushed cornflakes or crispy rice cereal, vanilla extract, and a pinch of salt until well combined.
Spoon a small amount of the peanut butter mixture on top of the chocolate layer in each muffin cup, pressing down gently to flatten.
Pour the remaining melted chocolate over the peanut butter layer, making sure to cover it completely.
Place the muffin tin in the refrigerator for about 30 minutes, or until the chocolate has set.
Once set, remove the vegan Butterfinger cups from the muffin tin and enjoy
