Vegan Carrot Cake Roll
Ingredients:
For the cake:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup shredded carrots
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/3 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
For the filling:
- 8 oz vegan cream cheese, softened
- 1/4 cup vegan butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven: Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan (10×15 inches) with parchment paper.
- Prepare the dry ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Prepare the wet ingredients: In a separate large bowl, combine the shredded carrots, granulated sugar, brown sugar, applesauce, vegetable oil, and vanilla extract. Mix well.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Bake the cake: Spread the batter evenly onto the prepared jelly roll pan. Bake in the preheated oven for 12-15 minutes or until the cake springs back when touched.
- Prepare a kitchen towel: While the cake is baking, lay out a clean kitchen towel and dust it with powdered sugar.
- Roll the cake: Once the cake is done baking, immediately invert it onto the prepared kitchen towel. Carefully peel off the parchment paper. Roll the cake, starting from one of the shorter ends, along with the towel. Allow it to cool completely.
- Prepare the filling: In a mixing bowl, beat together the vegan cream cheese, vegan butter, powdered sugar, and vanilla extract until smooth and creamy.
- Unroll the cake: Gently unroll the cooled cake and spread the cream cheese filling evenly over the surface.
- Roll it up again: Carefully re-roll the cake, this time without the towel. Wrap it in plastic wrap and refrigerate for at least 1-2 hours to set.
