Ingredients:
For the crust:
1 cup all-purpose flour
1 teaspoon instant yeast
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 cup warm water
1 tablespoon olive oil
For the toppings:
1/2 cup vegan cheese shreds
1/2 cup sliced mushrooms
1/4 cup pizza sauce
Fresh basil leaves, chopped (optional)
Instructions:
In a mixing bowl, whisk together the flour, yeast, salt, and sugar.
Add the warm water and olive oil to the bowl and mix until a dough forms.
Turn the dough out onto a floured surface and knead for 5-7 minutes until smooth and elastic.
Roll the dough out into a thin crust and transfer it to a lightly oiled pizza pan.
Spread the pizza sauce over the crust, leaving a 1/2-inch border around the edge.
Sprinkle the vegan cheese shreds over half of the pizza.
Add sliced mushrooms over the other half of the pizza.
Bake the pizza at 425°F for 12-15 minutes, or until the crust is golden brown and the cheese is melted.
Remove from the oven and sprinkle with chopped basil leaves if desired.
