Vegan chickpea sandwich

Ingredients:
1 can of chickpeas, drained and rinsed
1/4 cup vegan mayonnaise
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
Salt and pepper to taste
4 slices of bread
1 cup cooked vegetables (such as bell peppers, zucchini, and mushrooms)
1 tbsp olive oil
Instructions:
In a mixing bowl, smash the chickpeas with a fork or a potato masher until they are partially mashed but still have some texture.
Add vegan mayonnaise, garlic powder, onion powder, paprika, salt, and pepper to the chickpeas and mix well.
Heat olive oil in a skillet over medium-high heat. Add the cooked vegetables and sauté until heated through and slightly browned.
Toast the bread slices.
Assemble the sandwich by spreading the chickpea mixture evenly over two slices of toast. Top with the cooked vegetables and then the remaining slices of toast.
Serve and enjoy your vegan cooked veggies and smashed chickpea sandwich!
