Vegan chilli cheese burger

Ingredients:
For the vegan burger patty:
1 cup cooked quinoa
1 cup cooked black beans, mashed
1/2 cup breadcrumbs
1/4 cup chopped onion
2 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon soy sauce
1 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and pepper to taste
For the vegan chili:
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 bell pepper, chopped
1 jalapeño pepper, seeded and finely chopped (optional)
1 can (14 oz) diced tomatoes
1 can (14 oz) kidney beans, drained and rinsed
1 can (14 oz) black beans, drained and rinsed
1 tablespoon tomato paste
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper to taste
For assembling:
Vegan burger buns
Vegan cheese slices (cheddar or pepper jack style)
Sliced tomatoes
Sliced red onions
Lettuce or spinach leaves
Instructions:
In a large mixing bowl, combine all the ingredients for the vegan burger patty. Mix well until everything is evenly incorporated. Shape the mixture into patties.
Heat a grill pan or skillet over medium heat and lightly grease it. Cook the burger patties for about 4-5 minutes on each side until golden brown and cooked through. Remove from heat and set aside.
In a separate large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, bell pepper, and jalapeño pepper (if using). Sauté until the vegetables are tender.
Add the diced tomatoes, kidney beans, black beans, tomato paste, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Stir well to combine. Simmer the chili for about 15-20 minutes, allowing the flavors to meld together. Adjust the seasoning to taste.
While the chili is simmering, prepare the burger buns. Toast them if desired.
To assemble the burgers, place a cooked vegan patty on the bottom half of each bun. Top with a slice of vegan cheese, followed by a generous spoonful of the chili. Add sliced tomatoes, red onions, and lettuce or spinach leaves.
Place the top half of the bun on each burger. Serve immediately and enjoy your vegan chili cheeseburgers
