Ingredients:

For the Filling:
  • 2 cups finely chopped cabbage
  • 1 cup finely chopped mushrooms (shiitake or cremini)

  • 1/4 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Wonton or dumpling wrappers (store-bought or homemade)

Instructions:

  1. Prepare the Filling:
    • In a large bowl, mix together the chopped cabbage, mushrooms, carrots, green onions, minced garlic, grated ginger, soy sauce, sesame oil, rice vinegar, cornstarch, sugar, salt, and pepper.
  2. Fill and Seal the Dumplings:
    • Place a small amount of the filling in the center of each dumpling wrapper.
    • Moisten the edges of the wrapper with water, fold the wrapper in half, and pinch the edges to seal. You can use pleats for decoration if desired.
  3. Cook the Dumplings:
    • Heat a non-stick pan with a lid over medium-high heat and add a tablespoon of oil.
    • Arrange the dumplings in the pan without overcrowding.
    • Cook until the bottoms are golden brown (for about 2-3 minutes).
    • Carefully pour in 1/4 cup of water and immediately cover the pan with a lid. Steam the dumplings for about 5-6 minutes or until the wrappers are tender and the filling is cooked.
  4. Serve:
    • Remove the lid and let any remaining water evaporate. Once the bottoms crisp up again, they are ready to serve.
    • Serve with a dipping sauce made from soy sauce, rice vinegar, sesame oil, and chili flakes if desired.
