Ingredients:
2 cups rolled oats
1 cup chopped nuts (such as almonds, pecans, or walnuts)
1/2 cup dried fruit (such as raisins, cranberries, or chopped dates)
1/2 cup vegan chocolate chips
1/4 cup almond butter
1/4 cup maple syrup
1/4 cup brown sugar
1 tsp vanilla extract
1/4 tsp salt
Instructions:
Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
In a large mixing bowl, combine the oats, nuts, dried fruit, and vegan chocolate chips.
In a separate bowl, whisk together the almond butter, maple syrup, brown sugar, vanilla extract, and salt until smooth.
Pour the wet ingredients over the dry ingredients and mix until well combined.
Transfer the mixture to the prepared baking pan and press down firmly with a spatula to form an even layer.
Bake for 25-30 minutes, or until golden brown.
Let the granola bars cool completely in the pan, then cut into squares.
