Vegan chocolate nut clusters
Ingredients:
- 1 cup of vegan chocolate chips or chopped vegan chocolate
- 1 cup of mixed nuts (almonds, walnuts, cashews, etc.), chopped or whole
- 1/2 cup of dried fruits (raisins, cranberries, apricots, etc.), optional
- 1/2 teaspoon of vanilla extract
- A pinch of sea salt (optional)
Instructions:
- Prepare a Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat.
- Melt Chocolate: In a heatproof bowl, melt the vegan chocolate chips or chopped chocolate using a double boiler or in the microwave. If using the microwave, heat in 20-30 second intervals, stirring between each, until fully melted.
- Add Vanilla and Salt: Once the chocolate is melted, stir in the vanilla extract and a pinch of sea salt if desired. Mix well to combine.
- Combine Nuts and Fruits: Add the mixed nuts and dried fruits to the melted chocolate. Stir until the nuts and fruits are well coated with chocolate.
- Form Clusters: Using a spoon, drop small clusters of the chocolate-nut mixture onto the prepared baking sheet. You can make them as small or as large as you prefer.
- Set: Allow the clusters to set by placing the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate hardens.
- Serve: Once the clusters are fully set, remove them from the refrigerator. Store in an airtight container in the refrigerator or at room temperature, depending on your preference.
