VEGAN CHOP SANDWICH W/HOMEMADE FRIES

Ingredients for Vegan Chop:
For the Chop:
1 cup vital wheat gluten
1/4 cup nutritional yeast
2 tbsp chickpea flour
1 tbsp smoked paprika
1 tbsp onion powder
1 tbsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 cup vegetable broth
2 tbsp tomato paste
2 tbsp soy sauce
1 tbsp olive oil
For the Breading:
1 cup breadcrumbs (use vegan breadcrumbs to keep it fully vegan)
1/2 cup all-purpose flour
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup plant-based milk (e.g. almond milk, soy milk)
For the Sandwich:
Vegan burger buns
Lettuce, tomato, and any other desired toppings
Ingredients for Homemade Fries:
4 large russet potatoes, washed and peeled
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
Instructions:
For the Vegan Chop:
In a large mixing bowl, whisk together the vital wheat gluten, nutritional yeast, chickpea flour, smoked paprika, onion powder, garlic powder, salt, and black pepper.
In a separate bowl, whisk together the vegetable broth, tomato paste, soy sauce, and olive oil.
Add the wet ingredients to the dry ingredients and mix until a dough forms.
Knead the dough for a few minutes until it becomes elastic.
Shape the dough into a log and wrap it tightly in aluminum foil.
Steam the wrapped log for 45 minutes in a steamer or a pot with a steamer basket.
After steaming, unwrap the log and let it cool for a few minutes. Then slice it into thick chops.
In a shallow dish, combine the breadcrumbs, flour, smoked paprika, salt, and black pepper to make the breading.
Dip each chop into the plant-based milk, then coat it in the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the chop.
Heat some oil in a pan over medium heat and fry the chops for 3-4 minutes on each side until golden brown and crispy.
For the Homemade Fries:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the peeled potatoes into thick fries or wedges.
In a large bowl, toss the potato fries with olive oil, salt, black pepper, and paprika until evenly coated.
Arrange the fries in a single layer on the prepared baking sheet.
Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.
To Assemble the Vegan Chop Sandwich:
Toast your vegan burger buns if desired.
Place a fried chop on the bottom bun.
Add lettuce, tomato slices, and any other desired toppings.
Top with the other half of the bun.
