Vegan Colorful Breakfast

Ingredients:

  • 1 Yukon gold potato, smashed
  • Mixed mushrooms (e.g., cremini, shiitake), sliced
  • Fresh spinach leaves
  • Red bell pepper, thinly sliced
  • Green onion, chopped
  • White beans (cooked in an instant pot or canned), a couple of spoonfuls
  • Grape tomatoes, halved

👩‍🍳 Instructions:

  1. Boil or steam the Yukon gold potato until soft, then smash it onto a plate.
  2. In a pan, sauté the mixed mushrooms, fresh spinach, red bell pepper, and green onion until tender.
  3. Arrange the sautéed vegetables on top of the smashed potato.
  4. Add a couple of spoonfuls of cooked white beans for extra protein.
  5. Garnish with halved grape tomatoes.
