Vegan Cornbread

Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsweetened almond milk
1/4 cup melted coconut oil
1 tablespoon apple cider vinegar
Instructions:
Preheat the oven to 375°F (190°C).
Grease an 8-inch square baking pan with cooking spray or coconut oil.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the almond milk, melted coconut oil, and apple cider vinegar.
Add the wet ingredients to the dry ingredients and stir until just combined.
Pour the batter into the prepared pan and smooth the top with a spatula.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for a few minutes before slicing and serving.
