Ingredients:
1 can of hearts of palm, drained and chopped
1/2 cup of breadcrumbs
1/2 cup of finely chopped red bell pepper
1/4 cup of finely chopped green onion
2 tablespoons of vegan mayonnaise
1 tablespoon of Dijon mustard
1 tablespoon of lemon juice
1 teaspoon of Old Bay seasoning
Salt and black pepper to taste
Vegetable oil for frying
Instructions:
In a mixing bowl, combine the chopped hearts of palm, breadcrumbs, red bell pepper, green onion, vegan mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and black pepper.
Mix everything together until well combined.
Form the mixture into 8 patties and place them on a plate lined with parchment paper.
Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the skillet.
Add the crab cakes to the skillet and fry for 3-4 minutes on each side until golden brown and crispy.
Remove the crab cakes from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Serve the vegan crab cakes with your favorite dipping sauce and enjoy!
