Vegan Dolly Parton Cake

Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup vegan butter, softened
1 cup granulated sugar
2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
1 tsp vanilla extract
1 cup unsweetened applesauce
1/2 cup plant-based milk (such as almond, soy, or oat milk)
1/2 cup chopped walnuts
1/2 cup raisins
For the frosting:
1/2 cup vegan butter, softened
4 cups powdered sugar
1/4 cup plant-based milk (such as almond, soy, or oat milk)
1 tsp vanilla extract
Instructions:
Preheat the oven to 350°F (175°C) and grease a 9-inch (23 cm) cake pan.
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate large bowl, beat the vegan butter and granulated sugar until creamy. Add the flax eggs and vanilla extract and mix until combined.
Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce and plant-based milk, and mix until just combined.
Fold in the chopped walnuts and raisins.
Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
Let the cake cool completely before frosting.
To make the frosting, beat the vegan butter in a large bowl until creamy. Gradually add the powdered sugar, plant-based milk, and vanilla extract, and mix until smooth.
