Vegan falafels

Ingredients:
1 can chickpeas, drained and rinsed
1/2 cup chopped fresh parsley
1/2 cup chopped fresh cilantro
1 small onion, chopped
2 garlic cloves, minced
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
1-2 tablespoons olive oil
Instructions:
Preheat oven to 375°F (190°C).
In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, flour, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky.
Using your hands or a cookie scoop, form the mixture into small balls or patties.
Heat olive oil in a large skillet over medium-high heat. Add the falafels to the skillet and cook until golden brown on all sides.
Transfer the falafels to a baking sheet and bake for 10-12 minutes, or until heated through.
