Ingredients:
4 slices of bread (preferably thick slices)
1 cup of plant-based milk (such as almond milk, soy milk, or oat milk)
2 tablespoons of chickpea flour
1 tablespoon of nutritional yeast
1 tablespoon of maple syrup or agave nectar
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
Pinch of salt
Coconut oil or vegan butter for cooking
Instructions:
In a shallow bowl, whisk together the plant-based milk, chickpea flour, nutritional yeast, maple syrup or agave nectar, vanilla extract, ground cinnamon, and salt until well combined. This will be your batter.
Heat a non-stick skillet or griddle over medium heat and add a small amount of coconut oil or vegan butter to coat the surface.
Dip one slice of bread into the batter, making sure to coat both sides evenly. Allow any excess batter to drip off.
Place the coated bread slice onto the heated skillet or griddle and cook for about 2-3 minutes on each side, or until golden brown and crispy.
Repeat the dipping and cooking process with the remaining slices of bread.
Serve the vegan French toast warm with your favorite toppings, such as fresh fruit, maple syrup, vegan whipped cream, or a sprinkle of powdered sugar
