Vegan FRIED POTATOES AND ONIONS

Ingredients:

4 medium-sized potatoes, peeled and thinly sliced
1 large onion, thinly sliced
2-3 tablespoons olive oil or any preferred oil
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley or green onions for garnish (optional)

Instructions:

Prepare the Potatoes and Onions:

Heat the olive oil in a large skillet or frying pan over medium heat.
Add the thinly sliced potatoes and onions to the skillet, spreading them out into an even layer.
Season and Fry:

Sprinkle paprika, garlic powder, salt, and pepper evenly over the potatoes and onions.
Allow the potatoes and onions to cook without stirring for a few minutes to get a golden crust on one side. Then, using a spatula, gently flip and stir the potatoes and onions.
Continue Cooking:

Cook for about 15-20 minutes or until the potatoes are tender and golden brown, stirring occasionally to prevent sticking and ensure even cooking.

Once the potatoes and onions are cooked to your desired crispiness, transfer them to a serving dish.
Garnish with fresh parsley or green onions if desired and serve hot.
