Ingredients:
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegan butter, melted
1/4 cup non-dairy milk (such as almond or soy)
1 teaspoon vanilla extract
1/2 cup chopped lightly-salted peanuts
Instructions:
Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt until well combined.
Add the melted vegan butter, non-dairy milk, and vanilla extract to the dry ingredients. Mix until a thick batter forms.
Fold in the chopped peanuts until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake in the preheated oven for 25-30 minutes, or until the edges are crispy and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Once cooled, slice the brownies into squares and enjoy!
