vegan Gourmet Chickpeas and Broccoli in Silken White Sauce recipe
Ingredients:
- 2 cups cooked chickpeas (or 1 can, drained and rinsed)
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons all-purpose flour (or gluten-free flour for a gluten-free option)
- 2 cups vegetable broth
- 1 cup unsweetened almond milk (or any other plant-based milk)
- Salt and pepper to taste
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon nutmeg
- Fresh parsley for garnish (optional)
Instructions:
- Steam or blanch the broccoli florets until they are tender but still crisp. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
- Sprinkle the flour over the onion and garlic mixture. Stir well to combine and cook for another 2 minutes to cook off the raw taste of the flour.
- Gradually pour in the vegetable broth while whisking constantly to prevent lumps from forming. Once all the broth is added, pour in the almond milk. Continue to whisk until the mixture is smooth and thickened.
- Add the cooked chickpeas and steamed broccoli florets to the skillet. Stir gently to combine, making sure the chickpeas and broccoli are coated in the sauce.
- Season the mixture with salt, pepper, dried thyme, dried oregano, and nutmeg. Adjust the seasoning according to your taste.
- Allow the mixture to simmer gently for about 5-7 minutes, or until everything is heated through and the flavors have melded together.
