Ingredients:
6 Inari pockets (deep-fried tofu pockets)
3 tablespoons corn kernels
2 tablespoons vegan mayo
1 tablespoon sriracha
1 teaspoon soy sauce
1 teaspoon rice vinegar
Salt, to taste
2 tablespoons chopped seaweed salad
Green onions, for garnish (optional)
Instructions:
Start by heating up the Inari pockets in the microwave for about 30 seconds, or until warm and pliable.
In a small mixing bowl, whisk together the vegan mayo, sriracha, soy sauce, and rice vinegar. Season with salt, to taste.
Fill half of the Inari pockets with the corn kernels and the prepared sauce.
Fill another half of the Inari pockets with the seaweed salad.
Fill the remaining pockets with no toppings.
Serve the Inari pockets warm and garnished with green onions, if desired. Enjoy!
