Vegan lasagna

Ingredients:
-Lasagna sheets – 1 package (I used 15/18 sheets in total) -Beyond meat – 4 sausage links, plus 1-2 beyond burger patties, if you want it beefy! -Sauce – A ton. 48 ounces minimum. (I used 64, and reduced it first to pack more in!) Can’t have too much tomato sauce! -Tofu ricotta- (just 1 block tofu, 2 tsp miso, 2 tbsp olive oil, lemon juice, salt) -Cashew mozzarella (see below) -Spinach, 1 pound. (about 1/2 kg)
There will be an excess of some ingredients, depending on how you build it. They are all easy to snack on or repurpose! Extra sauce should be served with the lasagna.
Here are my 2 favorite mozz recipes for this lasagna. However, neither calls for miso, and I would definitely add about 1/2 tablespoon.
