VEGAN LEMON CURD CHÍA SEED PUDDING

Ingredients:
1/2 cup chia seeds
2 cups unsweetened almond milk
1/4 cup freshly squeezed lemon juice
1 tablespoon lemon zest
1/4 cup maple syrup
1/4 cup vegan butter
1/2 teaspoon vanilla extract
Pinch of salt
Instructions:
In a large mixing bowl, whisk together the chia seeds, almond milk, lemon juice, lemon zest, maple syrup, vanilla extract, and salt until well combined.
In a small saucepan, melt the vegan butter over medium heat. Once melted, pour it into the mixing bowl and stir until everything is fully incorporated.
Cover the mixing bowl and let it sit in the fridge for at least 1 hour or overnight. The chia seeds will absorb the liquid and create a pudding-like consistency.
Once the chia seed pudding has set, give it a good stir to make sure everything is well combined.
To serve, spoon the lemon curd chia seed pudding into individual jars or bowls. Top with some fresh berries or fruit if desired. Enjoy!
Note: If the pudding is too thick, add more almond milk until it reaches your desired consistency. If it’s too thin, add more chia seeds and let it sit for another 30 minutes to thicken up
