Vegan Nachos

Tortilla Chips: Que Pasa Brand (organic and vegan)—they come in blue corn, regular corn, and multi grain as well.
Rice: I made brown rice —nothing special lol—just boiled it.
Black Beans: I soaked the black beans in a bowl overnight in warm water. The next day I rinsed them and put them in a pot (about 3/4 way full of water) with one small white onion diced, half of a green and orange bell pepper. I seasoned them with lawrys seasoned salt, garlic powder, onion powder, paprika, ground red pepper, and a few shakes of crushed red pepper. Let them cook for about 2.5-3 hours on a low heat.
You can also save time and get a few cans of organic black beans and season them with whatever you like.
Corn: frozen corn heated up with a small amount of vegan butter and a dash of sea salt.
Cheese: Violife Brand or Daiya Brand Shredded Cheese (I used a blend of Mozzarella and Cheddar. Still trying to find a vegan cheese that I absolutely love lol.
Chop up some green leaf lettuce
Top them off with
Pico De Gallo: 1/2 of a Red Bell Pepper and Green Bell Pepper diced small. 1/2 of a white and red onion diced small. One Greenhouse Tomato diced small (you can use roma or whatever you prefer), one fresh jalapeño diced small, one Serrano pepper diced small, about 1/8 cup of fresh cilantro chopped up. Juice from half of a lemon and lime. Season with ground red pepper and garlic powder—mix up….it’s delicious!
