Vegan No-Bake Cheesecake

Ingredients:
1 cup raw cashews, soaked overnight
1 cup pitted dates
1/2 cup raw cacao powder
1/2 cup melted coconut oil
1/4 cup pure maple syrup
1 tsp pure vanilla extract
pinch of sea salt
fresh berries or shaved chocolate for topping
For the crust:
In a food processor, pulse the pitted dates until they form a sticky ball.
Grease a 9-inch springform pan with coconut oil and press the date mixture evenly into the bottom of the pan.
Place in the freezer while you prepare the filling.
For the filling:
Drain and rinse the soaked cashews.
In the same food processor, combine the cashews, cacao powder, melted coconut oil, maple syrup, vanilla extract, and sea salt. Blend until smooth and creamy.
Pour the mixture into the crust and smooth out the top.
Place in the freezer for at least 2-3 hours, until firm.
Remove from the freezer and let sit at room temperature for 10-15 minutes before slicing and serving.
Top with fresh berries or shaved chocolate, if desired
