Vegan Nougat Bars Recipe
Ingredients:
- 1 cup raw almonds (you can also use other nuts like hazelnuts)
- 1 cup vegan marshmallows
- 1/4 cup maple syrup or agave syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- A pinch of salt
- Optional: chopped dried fruit like cranberries or apricots
Instructions:
- Prepare the Pan:
- Line a baking dish or pan with parchment paper. This will prevent the nougat from sticking.
- Toast the Almonds:
- Preheat your oven to 350°F (175°C).
- Spread the almonds evenly on a baking sheet and toast them in the preheated oven for about 8-10 minutes, or until they’re lightly golden and fragrant. Keep an eye on them to prevent burning. Once toasted, remove them from the oven and let them cool.
- Prepare the Nougat Mixture:
- In a saucepan, melt the coconut oil over low heat.
- Add the vegan marshmallows to the melted coconut oil and stir until they are completely melted and combined.
- Stir in the maple syrup or agave syrup, vanilla extract, and a pinch of salt. Mix until everything is well combined and smooth.
- Combine the Ingredients:
- Once the mixture is smooth, remove the saucepan from the heat.
- Stir in the toasted almonds (and optional dried fruit) until they are evenly coated with the nougat mixture.
- Shape and Set:
- Pour the nougat mixture into the prepared baking dish or pan.
- Use a spatula or your hands to press the mixture firmly and evenly into the pan.
- Place the pan in the refrigerator and let the nougat set for at least 2-3 hours, or until firm.
- Slice and Serve:
- Once the nougat has set, remove it from the refrigerator and lift it out of the pan using the parchment paper.
- Place it on a cutting board and slice it into bars or squares using a sharp knife.
