Vegan Oyster Mushroom Pot Pie

Ingredients:
For the pastry:2 cups all-purpose flour 1 teaspoon salt 1 teaspoon sugar 1 cup vegan butter, chilled and cut into small cubes 4-6 tablespoons ice-cold water
For the filling:1 tablespoon olive oil 1 onion, diced 3 cloves garlic, minced 1 teaspoon dried thyme 1 teaspoon dried rosemary Salt and pepper, to taste 1 cup oyster mushrooms, sliced 1 cup frozen peas and carrots 1/4 cup all-purpose flour 2 cups vegetable broth 1/4 cup nutritional yeast 2 tablespoons vegan butter
Instructions:
For the pastry: In a large bowl, whisk together the flour, salt, and sugar. Add the chilled vegan butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
Gradually add the ice-cold water, 1 tablespoon at a time, until the dough comes together. Knead the dough lightly on a floured surface and form it into a disk. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
For the filling: In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, thyme, rosemary, salt, and pepper and cook for another minute.
Add the sliced oyster mushrooms and frozen peas and carrots to the pan and cook until the mushrooms are tender, about 5-7 minutes.
Stir in the flour and cook for 1-2 minutes. Gradually add the vegetable broth, whisking continuously, until the mixture thickens. Stir in the nutritional yeast and vegan butter. Remove from heat.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
On a floured surface, roll out the chilled pastry dough to about 1/4-inch thick. Cut the dough into 6-inch circles (use a large cookie cutter or a bowl as a guide).
Spoon about 1/2 cup of the filling into the center of each pastry circle. Fold the edges of the dough up and over the filling, crimping the edges to seal.
Transfer the handheld pies to the prepared baking sheet and bake for 25-30 minutes, or until the crust is golden brown.
