Ingredients:
1 pound oyster mushrooms, cleaned and trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon maple syrup
1 tablespoon rice vinegar
Salt and pepper to taste
Chopped parsley for garnish (optional)
Instructions:
Preheat the oven to 375°F.
In a small bowl, whisk together olive oil, garlic, soy sauce, maple syrup, rice vinegar, salt, and pepper.
Arrange the oyster mushrooms in a single layer on a baking sheet lined with parchment paper.
Pour the sauce over the mushrooms and toss until they are well coated.
Roast in the preheated oven for 20-25 minutes, until the mushrooms are tender and slightly browned.
Remove from the oven and let cool for a few minutes before serving.
Garnish with chopped parsley, if desired.
