Vegan pot roast

Ingredients:
1 large yellow onion, chopped
3 garlic cloves, minced
3 large carrots, peeled and chopped into 1-inch pieces
2 stalks celery, chopped into 1-inch pieces
1 small rutabaga, peeled and chopped into 1-inch pieces
1 small turnip, peeled and chopped into 1-inch pieces
1 small sweet potato, peeled and chopped into 1-inch pieces
1 cup mushrooms, sliced
1 cup vegetable broth
2 tablespoons tomato paste
1 tablespoon soy sauce
1 tablespoon vegan Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
2 tablespoons olive oil
For the seitan:
1 cup vital wheat gluten
1/4 cup nutritional yeast
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
3/4 cup water
1 tablespoon tomato paste
1 tablespoon soy sauce
1 tablespoon olive oil
Instructions:
Preheat your oven to 350°F.
In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook for 2-3 minutes, until fragrant.
Add the chopped carrots, celery, rutabaga, turnip, sweet potato, and mushrooms to the pot. Stir well to combine.
In a small bowl, whisk together the vegetable broth, tomato paste, soy sauce, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the vegetables in the pot and stir well.
In a separate bowl, mix together the vital wheat gluten, nutritional yeast, onion powder, garlic powder, smoked paprika, thyme, rosemary, and salt.
In another bowl, whisk together the water, tomato paste, soy sauce, and olive oil.
Add the wet ingredients to the dry ingredients and mix well. Knead the dough for a few minutes, until it becomes elastic.
Shape the seitan dough into a log and place it on top of the vegetables in the pot.
Cover the pot with a lid and bake for 1 hour and 15 minutes, or until the seitan is cooked through and the vegetables are tender.
Remove the pot from the oven and let it cool for a few minutes. Slice the seitan and serve it with the vegetables and sauce.
