VEGAN POTATO CUTLET ( BURGER PATTIES)
Ingredients:
- 4 medium-sized potatoes, boiled and mashed
- 1/2 cup breadcrumbs (you can use whole wheat or gluten-free breadcrumbs if preferred)
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped bell peppers (any color)
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh cilantro or parsley
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- Salt to taste
- Black pepper to taste
- 2 tablespoons vegetable oil (for frying)
Instructions:
- In a large mixing bowl, combine the mashed potatoes, breadcrumbs, chopped onions, chopped bell peppers, minced garlic, chopped cilantro or parsley, paprika, ground cumin, salt, and black pepper. Mix well until all ingredients are evenly distributed.
- Once the mixture is well combined, divide it into equal-sized portions and shape each portion into a round patty. You can adjust the size of the patties according to your preference.
- Heat vegetable oil in a skillet over medium heat.
- Once the oil is hot, carefully place the patties into the skillet, making sure not to overcrowd the pan. You may need to cook them in batches depending on the size of your skillet.
- Cook the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
- Serve the vegan potato cutlet burger patties on burger buns with your favorite toppings such as lettuce, tomato, onion, avocado, and vegan mayo or ketchup.
