Ingredients:
2 pounds potatoes, peeled and diced
1 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon vegan butter
1 tablespoon chopped fresh parsley
Water, for boiling
Instructions:
In a large pot, boil the diced potatoes until they are tender. Drain and let cool for a few minutes.
Mash the potatoes with a potato masher or fork until they are smooth.
Add the flour, salt, vegan butter, and parsley to the mashed potatoes. Mix well until a dough forms.
On a floured surface, knead the dough until it is smooth and not sticky. If the dough is too dry, add a little water to it.
Divide the dough into equal-sized balls.
Bring a pot of water to a boil. Drop the dumplings into the water and cook for about 10-15 minutes, or until they rise to the surface.
Using a slotted spoon, remove the dumplings from the water and transfer to a serving dish.
Serve hot with your favorite vegan sauce or toppings.
