Vegan Potatoes Delmonico

Ingredients:

  • 4-5 medium-sized potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 1/4 cup olive oil or melted vegan butter
  • 1/4 cup vegetable broth or water
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat Oven and Prep Potatoes:
    • Preheat your oven to 375°F (190°C).
    • Grease a baking dish with a bit of oil or vegan butter.
  2. Prepare Potatoes and Onions:
    • In a bowl, toss the thinly sliced potatoes and onions with olive oil or melted vegan butter until evenly coated.
  3. Seasoning:
    • In a separate bowl, mix minced garlic, dried thyme, dried rosemary, salt, and pepper together.
    • Sprinkle half of this seasoning mix over the potatoes and onions and toss to coat.
  4. Layering:
    • Layer half of the seasoned potatoes and onions into the prepared baking dish, arranging them evenly.
    • Sprinkle the remaining seasoning mix over this layer.
    • Layer the remaining potatoes and onions on top.
  5. Add Liquid and Bake:
    • Pour vegetable broth or water evenly over the layered potatoes.
    • Cover the baking dish with foil and bake in the preheated oven for about 45-55 minutes or until the potatoes are tender.
  6. Final Touch:
    • Remove the foil and bake for an additional 10-15 minutes until the top becomes slightly golden.
  7. Serve:
