Vegan Recipe for Puffed Tofu Rice and Veggies

Ingredients:
1 cup uncooked rice
1 1/2 cups water
1 tbsp vegetable oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
2 cups broccoli florets
1 block of puffed tofu, diced
1 tbsp soy sauce
1 tsp sesame oil
Salt and pepper to taste
Instructions:
Rinse the rice thoroughly in cold water and drain.
In a medium-sized pot, bring the water to a boil and add the rice. Cover and simmer for 18-20 minutes, or until the rice is cooked and fluffy.
Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
Add the bell peppers and broccoli and sauté for 5-7 minutes, or until the vegetables are tender.
Add the diced puffed tofu to the skillet and sauté for 2-3 minutes.
Add the soy sauce and sesame oil to the skillet and stir to combine.
Add the cooked rice to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the rice is heated through.
Season with salt and pepper to taste.
Serve hot and enjoy your vegan Puffed Tofu Rise
