VEGAN SESAME JACKFRUIT AND FRIED OYSTER MUSHROOMS OVER GARLIC LOMEIN

Ingredients:
1 can of young green jackfruit, drained and rinsed
1/4 cup of toasted sesame seeds
1/4 cup of soy sauce
1 tablespoon of rice vinegar
1 tablespoon of brown sugar
1 teaspoon of cornstarch
1/4 teaspoon of red pepper flakes
1/4 teaspoon of ground ginger
1 tablespoon of sesame oil
1 tablespoon of canola oil
8 oz of oyster mushrooms, sliced
1/2 teaspoon of salt
1/2 teaspoon of black pepper
8 oz of Lomein noodles
4 cloves of garlic, minced
1/4 cup of chopped green onions
Instructions:
Preheat a large skillet over medium heat.
In a bowl, mix the jackfruit with sesame seeds, soy sauce, rice vinegar, brown sugar, cornstarch, red pepper flakes, and ginger.
Add the sesame oil and canola oil to the skillet.
Once the oils are hot, add the jackfruit mixture and cook for 5 minutes, stirring occasionally.
While the jackfruit is cooking, in another skillet, heat 1 tablespoon of oil over medium heat.
Add the oyster mushrooms, salt, and black pepper to the skillet and cook for 5 minutes, until crispy.
In a large pot, cook the Lomein noodles according to the package instructions.
Drain the noodles and add the minced garlic and chopped green onions to the pot.
Toss the noodles with the garlic and green onions until well combined.
Serve the jackfruit mixture and fried oyster mushrooms over the garlic Lomein noodles. Enjoy!
