Tonight’s meal is vegan shepherds pie.
1.5 cup lentils, cooked and drained
Diced onion, celery, carrots and mushrooms
Chopped walnuts
Minced garlic
Earth balance 2T
Better than bouillon “beef” spoonful
Red cooking wine
Tomato paste small can
Vegan worsteshire sauce
Rosemary
Thyme
Cracked pepper
Parsley
Saute the diced veg in the earth balance until soft, add lentils, add red wine then cook it off, add remaining ingredients and cook until dry. If too moist add a spoon of flour
Make mashed potato i use earth balance and plain unsweetened soy milk, white pepper
Place in casserole dish bake at 350 for at least 30 minutes
