Ingredients:
1 cup green lentils, rinsed and drained
4 cups vegetable broth
1 onion, chopped
3 garlic cloves, minced
2 carrots, peeled and chopped
2 celery stalks, chopped
1 bell pepper, chopped
1 can diced tomatoes
1 teaspoon dried thyme
1 teaspoon paprika
1 bay leaf
Salt and pepper to taste
2 cups chopped greens (such as kale or spinach)
Fresh parsley, chopped (for garnish)
Instructions:
Place the green lentils, vegetable broth, onion, garlic, carrots, celery, bell pepper, diced tomatoes, thyme, paprika, bay leaf, salt, and pepper in the slow cooker. Stir to combine the ingredients.
Cover the slow cooker and cook on low heat for 6-8 hours or high heat for 3-4 hours, until the lentils are tender.
About 30 minutes before serving, stir in the chopped greens and adjust the seasoning if needed. Cover and continue cooking until the greens are wilted.
Remove the bay leaf before serving. Garnish with fresh parsley and serve the vegan lentil stew hot.
Note: Feel free to add other vegetables or spices of your choice to customize the stew to your liking. You can also serve it with crusty bread or rice for a complete meal.
