Vegan Soft & Chewy Flatbread

Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup warm water
- 2 tablespoons olive oil
- 1 tablespoon flaxseed meal mixed with 3 tablespoons water (as a flax egg)
- Vegan butter or olive oil for brushing
Instructions:
- Prepare the Flax Egg:
- In a small bowl, mix flaxseed meal with water and set aside to thicken, creating a flax egg.
- Mix Dry Ingredients:
- In a large mixing bowl, combine flour, sugar, salt, and baking powder.
- Add Wet Ingredients:
- Make a well in the center of the dry ingredients. Pour in the warm water, olive oil, and the prepared flax egg. Mix until a soft dough forms.
- Knead and Rest:
- Turn the dough onto a floured surface and knead for about 5 minutes until it becomes smooth. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rest for 1 hour.
- Divide and Shape:
- Preheat a skillet or griddle over medium heat. Divide the rested dough into 8 equal portions. Roll each portion into a ball and then flatten it into a round flatbread.
- Cook the Flatbreads:
- Cook each flatbread on the preheated skillet for about 1-2 minutes on each side, or until bubbles form and the flatbread puffs up. Brush with vegan butter or olive oil during cooking.
- Serve:
- Stack the cooked flatbreads on a plate and cover them with a cloth to keep them warm. Serve them with your favorite vegan dips or fillings.
