Vegan Strawberry Peach Cobbler

Here is a recipe for a vegan strawberry peach cobbler:

Ingredients:

  • 3 cups sliced peaches (about 3-4 medium peaches)
  • 2 cups sliced strawberries
  • 1/4 cup maple syrup
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegan butter, melted
  • 1/2 cup non-dairy milk (such as almond or soy milk)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the sliced peaches, sliced strawberries, maple syrup, cornstarch, cinnamon, and nutmeg. Stir until the fruit is coated with the mixture and set aside.
  3. In another bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Add the melted vegan butter, non-dairy milk, and vanilla extract to the bowl with the dry ingredients. Mix until the batter is smooth.
  5. Pour the fruit mixture into a 9-inch baking dish.
  6. Spoon the batter over the fruit mixture, making sure to cover it completely.
  7. Bake for 35-40 minutes, until the top is golden brown and the fruit is bubbly.
