Vegan Sushi bake

Ingredients:
3 cups sushi rice
3 cups water
1/2 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
1/2 cup vegan mayonnaise
2 tablespoons soy sauce
1 tablespoon sriracha sauce
1 tablespoon sesame oil
2 cups cooked edamame
1 cup sliced cucumber
1 cup sliced carrots
1 cup sliced avocado
1/4 cup sliced green onions
1 tablespoon black sesame seeds
Instructions:
Preheat the oven to 375°F (190°C).
Rinse the sushi rice in a strainer until the water runs clear. Add the rice and water to a pot and bring to a boil. Reduce heat to low and cover. Cook for 18 minutes, then remove from heat and let sit for 10 minutes.
In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves.
Once the rice is done, transfer it to a large mixing bowl. Add the vinegar mixture and stir until well combined.
In a small bowl, whisk together the vegan mayonnaise, soy sauce, sriracha sauce, and sesame oil.
Add the edamame, cucumber, carrots, and half of the avocado to the rice mixture. Pour the mayonnaise mixture over the top and stir until everything is well coated.
Transfer the mixture to a 9×13-inch baking dish and spread it out evenly.
Bake for 15 minutes.
Remove from the oven and sprinkle the green onions, remaining avocado, and black sesame seeds over the top.
Serve hot and enjoy your delicious vegan sushi bake!
