Vegan Taco Pizza
Ingredients:
For the Pizza Dough:
- 1 package (2 1/4 teaspoons) active dry yeast
- 1 cup warm water
- 2 1/2 cups all-purpose flour
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
For the Taco Sauce:
- 1/2 cup tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Toppings:
- 1 cup cooked black beans
- 1 cup corn kernels (fresh or frozen)
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup vegan shredded cheese
- Sliced jalapeños (optional)
- Chopped fresh cilantro (optional)
- Sliced avocado (optional)
- Lime wedges (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour, salt, and olive oil. Add the yeast mixture and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 30-45 minutes, or until it doubles in size.
- While the dough is rising, prepare the taco sauce by mixing together the tomato sauce, chili powder, cumin, garlic powder, salt, and pepper in a small bowl. Adjust the seasoning to taste.
- Once the dough has risen, punch it down and roll it out into a large circle on a floured surface. Transfer the dough to a pizza pan or baking sheet.
- Spread the taco sauce evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle the cooked black beans, corn kernels, diced bell pepper, and diced onion over the sauce.
- Top the pizza with vegan shredded cheese.
- If desired, add sliced jalapeños for extra heat.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Remove the pizza from the oven and let it cool for a few minutes before slicing.
- Serve the vegan taco pizza with optional toppings such as chopped fresh cilantro, sliced avocado, and lime wedges.
