Ingredients:

For the Vegan Mascarpone Filling:

  • 1 1/2 cups raw cashews, soaked for at least 4 hours or overnight
  • 1/2 cup coconut cream (from a can of full-fat coconut milk)
  • 1/4 cup maple syrup (or agave syrup)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/4 tsp salt

For the Coffee Soak:

  • 1 1/2 cups strong brewed coffee, cooled (or espresso)
  • 2 tbsp rum (optional, but recommended for authentic flavor)
  • 2 tbsp maple syrup (or agave syrup)

For the Base:

  • 1 package of vegan ladyfingers (or homemade vegan sponge cake)
    (Note: You can also use a sliced, vegan-friendly pound cake or even graham crackers if you can’t find ladyfingers.)

For Topping:

  • Unsweetened cocoa powder, for dusting
  • Vegan chocolate shavings (optional)

Instructions:

  1. Prepare the Vegan Mascarpone Filling:
    • Drain and rinse the soaked cashews. Add them to a high-speed blender or food processor along with the coconut cream, maple syrup, vanilla extract, lemon juice, and salt.

  2. Make the Coffee Soak:
    • In a shallow bowl or dish, combine the cooled brewed coffee, rum (if using), and maple syrup. Stir to combine. This is the liquid you’ll use to soak the ladyfingers or cake.
  3. Assemble the Tiramisu:
    • Quickly dip each ladyfinger or slice of cake into the coffee soak, making sure not to soak them too long (they should be moist but not soggy).
    • Lay the soaked ladyfingers in a single layer at the bottom of your serving dish or a 9×9-inch baking dish.
    • Spread half of the vegan mascarpone filling over the soaked ladyfingers, smoothing it into an even layer.
  4. Add Another Layer:
    • Repeat the process with another layer of soaked ladyfingers (or cake) and the remaining mascarpone filling. Smooth the top layer of mascarpone until even.
  5. Chill the Tiramisu:
    • Cover the tiramisu and refrigerate it for at least 4 hours, or overnight if possible. This allows the flavors to meld and the dessert to firm up.
  6. Serve:
    • Before serving, dust the top of the tiramisu with unsweetened cocoa powder. You can also garnish with vegan chocolate shavings for a little extra touch.
