Vegan vegetable rice

Ingredients:
1 cup of brown rice
2 cups of vegetable broth
1 tablespoon of olive oil
1/2 onion, chopped
2 garlic cloves, minced
1 carrot, diced
1 red bell pepper, diced
1 zucchini, diced
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 teaspoon of dried oregano
1 teaspoon of dried thyme
Instructions:
Rinse the rice in a fine-mesh sieve under cold running water.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until they become fragrant and translucent, stirring occasionally.
Add the diced carrot, red bell pepper, and zucchini to the pot. Cook for 5-7 minutes or until the vegetables are tender.
Add the rinsed brown rice to the pot, along with the vegetable broth, salt, black pepper, dried oregano, and dried thyme.
