Ingredients:
2 medium zucchinis
1 cup fresh basil leaves
1/4 cup pine nuts
2 cloves garlic, minced
1/4 cup extra-virgin olive oil
1/4 cup nutritional yeast
Salt and pepper to taste
Instructions:
Using a spiralizer or a vegetable peeler, make zucchini noodles by peeling the zucchinis into thin, noodle-like strips.
In a blender or food processor, combine the basil leaves, pine nuts, garlic, nutritional yeast, and a pinch of salt and pepper. Pulse until the mixture becomes a thick paste.
With the blender or food processor running, slowly pour in the olive oil until the mixture becomes a smooth sauce.
Heat a large skillet over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until they are tender but still slightly crunchy.
Pour the pesto sauce over the zucchini noodles and toss until the noodles are evenly coated.
Serve immediately and enjoy your delicious vegan zucchini pasta with pesto sauce!
