Ingredients:

  • 2 medium zucchinis, grated

  • 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
  • 2 tablespoons ground flaxseed (mixed with 6 tablespoons water to form a flax egg) or 2 tablespoons aquafaba (chickpea brine) as a binder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil (for greasing or brushing)

Instructions:

1. Prepare the Zucchini:

  • Grate the zucchinis using a box grater or food processor. Place the grated zucchini into a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This is important to prevent the tots from becoming soggy.
