Weight Watcher Crockpot Lasagna

Ingredients:

  • 1 pound ground beef (or ground turkey)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (29 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 9 lasagna noodles, uncooked
  • 4 cups shredded mozzarella cheese
  • 1 1/2 cups ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil and parsley for garnish (optional)

Instructions:

  1. In a large skillet, brown the ground beef (or turkey) along with the chopped onion and minced garlic. Drain any excess fat.
  2. Stir in the tomato sauce, tomato paste, diced tomatoes, sugar, salt, dried basil, dried oregano, and black pepper. Mix well and let it simmer for about 10 minutes.
  3. In a separate bowl, combine the ricotta cheese and grated Parmesan cheese.
  4. Grease the inside of your crockpot to prevent sticking.
  5. Begin layering the lasagna in the crockpot. Start by spooning a small amount of the meat sauce onto the bottom of the pot. This prevents the noodles from sticking.
  6. Add a layer of uncooked lasagna noodles, breaking them as needed to fit.
  7. Add a layer of the meat sauce.
  8. Add a layer of the ricotta cheese mixture.
  9. Add a layer of shredded mozzarella cheese.
  10. Repeat the layers as needed, ending with a final layer of mozzarella cheese on top.
  11. Cover the crockpot and cook on low for 4-6 hours or until the noodles are tender.
  12. Once the lasagna is cooked, turn off the crockpot and let it sit for about 15-20 minutes before serving to allow it to set.
  13. Garnish with fresh basil and parsley, if desired.
