Ingredients
For the Filling:
- 8 oz fat-free cream cheese, room temperature
- 3 tbsp Swerve Confectioners’ Sugar Substitute
- 2 tbsp unsweetened cocoa powder
- ½ tsp vanilla extract
For the Chocolate Coating:
- ¼ cup Lily’s Chocolate Baking Chips (sugar-free)
- 2 tbsp “I Can’t Believe It’s Not Butter”
Instructions
1. Prepare the Filling:
- In a small mixing bowl, combine the cream cheese, Swerve confectioners’ sugar substitute, cocoa powder, and vanilla extract. Beat or mix until smooth and creamy.
2. Shape the Candy:
- Fill each cavity of a silicone candy mold evenly with the chocolate mixture. Smooth the tops with a spatula or the back of a spoon.
- Place the candy-filled mold in the freezer for at least 1 hour, or until firm.
3. Make the Chocolate Coating:
- In a microwave-safe bowl, combine the Lily’s chocolate chips and “I Can’t Believe It’s Not Butter.” Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth.
- Allow the mixture to cool slightly until it’s barely warm but still fluid.
4. Coat the Candy:
- Remove the chilled candy from the silicone mold.
- Dip each piece into the melted chocolate mixture, ensuring it is fully coated. Use a fork to lift the candy and gently shake off any excess coating.
- Place the coated candies on a parchment-lined baking sheet.
5. Chill and Serve:
- Return the coated candies to the freezer and let them set until the chocolate hardens (about 15–20 minutes).
- Serve immediately or store in an airtight container in the freezer for future enjoyment.
