Ingredients:
For the Beef:
- 1 lb lean ground beef
- 1 packet taco seasoning (preferably low-sodium)
- 1/2 cup water
For the Nachos:
- Baked tortilla chips (enough for serving size)
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup pickled jalapeños (optional)
- 1/2 cup fat-free Greek yogurt or light sour cream
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook the Beef: In a skillet over medium heat, cook the lean ground beef until browned. Drain any excess fat. Add the taco seasoning and water, following the instructions on the seasoning packet. Simmer until the mixture thickens.
- Assemble the Nachos: On a large baking sheet, spread out the baked tortilla chips in a single layer. Evenly distribute the seasoned beef over the chips. Sprinkle shredded cheddar cheese on top.
- Bake: Place the baking sheet in the preheated oven and bake until the cheese is melted and bubbly, usually about 10 minutes.
- Add Toppings: Once out of the oven, sprinkle diced tomatoes, red onion, black olives, and pickled jalapeños (if using) evenly over the nachos.
- Finish: Drizzle fat-free Greek yogurt or light sour cream over the top.
- Serve: Serve immediately while the nachos are hot.
