Weight Watchers Cabbage Diet Soup


  • 1 small head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 bell peppers (any color), chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste


  1. In a large pot, sauté the onions and garlic over medium heat until they become translucent.
  2. Add the carrots, bell peppers, and celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Stir in the cabbage, diced tomatoes (with their juice), oregano, basil, thyme, salt, and pepper.
  5. Reduce the heat, cover the pot, and simmer for about 20-25 minutes or until the vegetables are tender.
  6. Adjust the seasoning to taste and serve hot.
