Ingredients:

  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger

  • 3 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain non-fat Greek yogurt
  • 1/2 cup granulated sugar or a sugar substitute of your choice, adjusted for sweetness

  • 1 cup grated carrots (about 2 medium carrots)

For the Cream Cheese Filling:

  • 8 oz reduced-fat cream cheese, softened
  • 1/4 cup powdered sugar or a sugar substitute of your choice, adjusted for sweetness
  • 1 tsp vanilla extract

Instructions:

For the Carrot Cake Roll:

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it with cooking spray or butter.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
  3. In a separate bowl, beat the eggs, applesauce, Greek yogurt, sugar (or sugar substitute), and vanilla extract until well combined.
