Weight Watchers Chickpea Salad

ngredients:

For the Salad:
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)
For the Dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
  3. Pour the dressing over the chickpea mixture. Toss gently until all ingredients are well coated.
  4. Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Before serving, garnish with chopped fresh parsley.
